BRUSSEL SPROUT & BROCCOLI SALAD

INGREDIENTS
​
500g brussel sprouts
1/2 a red cabbage
1 head broccoli finely chopped
150g dried cranberries
Juice of 1 lemon & equal amount of agave syrup
2 garlic cloves crushed
1/2 bunch spring onions

METHOD
​

Steam sprouts & broccoli if desired.

Put sprouts then cabbage into food processor in batches & pulse until shredded.

Transfer to a large bowl.

Add the broccoli & dried cranberries and mix well.

In a small bowl whisk together the lemon, honey, garlic, salt & pepper.

Once mixed add the spring onions.
-
Add dressing to salad & toss well.
