SEED & NUT BAR

INGREDIENTS

Bar
145g peanuts
2 tbsp smooth peanut butter (or similar nut butter - almond works very well)
1 large ripe banana mashed
25g milled flax seed
25g golden linseed (whole)
50g pumpkin seeds
50g sunflower seeds
30g puffed rice cereal
1 tsp cinnamon
1/2 tsp salt

Topping
3 tbsp smooth peanut butter
2 tbsp coconut oil
1 tspn glycerine
45g vegan dark chocolate

METHOD

Mix all bar ingredients well in a large bowl.

Fill all cubes evenly & pack down mixture well using back of a fork.

Ensure to clean any excess mixture from the internal edges of the cubes before baking.

Bake at 200C (180C fan oven) for 30/40 mins until gently browned.

Remove from oven & allow to cool completely. Do not remove bars from cubes yet.

In a small pot gently heat the peanut butter & coconut oil. When fully melted & mixed add the glycerine. Mix then remove from heat.

Allow topping to cool slightly in pan (10-15mins at room temp.) You should witness the consistency thicken slightly.

Meanwhile melt the dark chocolate in a bowl in the microwave.

Pour the topping mixture evenly into the cubes.

Drizzle the melted chocolate over the topping mixture.

Put bars in fridge to cool. Overnight ideally but 4/5 hours minimum.
